James Grant lead the Raid on Elgin in 1820, the last clan revolt of Scottish history. Two decades later, John and James Grant received a Distillery license from the Crown. With the sea and the port of Garmouth nearby, River Spey to the south, surrounded by barley farms, all the basic ingredients for brewing Malt were at hand. The brothers worked hard, Distillery Glen Grant flourished, the first in the Highlands to run electric light and to introduce the tall, slender sills and purifier that make the fresh Malty flavours and crystal amber hues which define Glen Grant Whisky to this day.

A state of the art cotton mill was established at Deanston in 1785, it became the centre of village life and the heart of a thriving community. The ancient mill was re established as a Distillery in 1965. Two big water turbines which powered the antique cotton works were adapted to draw pure water from River Teith, the weaving shed made an ideal resting place for Whisky to quietly mature. An excruciatingly limited edition for the most discerning Malt enthusiast, aged twenty years in prior use Oloroso Sherry barrels and bottled at full Cask Strength 55%.

Established in the 1890s, Dalwhinnie was taken over in 1905 by an American distiller who was looking for Malts to produce blended whiskies for the US market. The American adventure continued until prohibition in the 1920s. Dalwhinnie returned to the Scottish fold. Dalwhinnie eventually became part of another Whisky purveyor James Buchanan, best known for Black & White. Only 10% of the production is bottled and distributed as Single Malt, the remainder being a significant component of blends such as Black & White.

John Smith selected the site of the Cragganmore Distillery in 1869 for the quality of the water, the Craggan burn, and also because it was close to the Strathspey railway. John Smith loved his rail travel but was often forced to ride in goods wagons because of his weight; the passenger carriages being too narrow for him! A very experienced distiller, he had managed the Macallan, Glenlivet, Glenfarclas and Wishaw distilleries. About 30% of the production is now sold as single malt, the remaining part being used in blends like McCallum's Perfection and White Horse.

Established 1846 near the Islay port of Askaig, Caol Ila Distillery overlooks the scenic straits between the Isles of Islay and Jura. The site was chosen for its proximity to the waters of Loch Nam Ban, which are drawn through a course of limestone and peat. Cheers to the men of the maltings, monkey shoulder is in reference to a temporary injury suffered by Maltmen while turning barley by hand. Three of Speyside's finest Malts, Kininvie, Balvenie and Glenfiddich are aged in Bourbon casks coopered by Monkey Shoulder's own artisans. Only when the Malt has fully mellowed and matured are twenty seven individual casks selected for assembling into the final Whisky.

Although all of seven Islay distilleries produce very different Malts, they do have similar machinery. Part of life on an island is a reliance on your neighbour. This is why at each of the distilleries, you will find sheds filled with some very old parts. These are often rusted or broken but you never know when an old spring or cog can be reused in an emergency. Bunnahabhain XXV is an non chill filtered spirit, with natural colour and a higher strength of 46.3%, delivered in an Alder wooden chest lined with Hessian and closed with solid brass fittings.
